Salsa Verde Meatloaf

Salsa Verde and tortilla chips add Mexican flavor and flair to otherwise boring meatloaf.  Add our salsa to the beef mixture and then pour some over the top for lots of fabulous tomatillo flavor.


1.5 pounds ground beef
1.25 cups Pace® Salsa Verde
1 egg
0.75 cup finely crushed tortilla chips (about 2 1/4 ounces)
4 green onion, minced (about 1/2 cup)


Set the oven to 350°F.  While the oven is heating, season the beef as desired.
Thoroughly mix 3/4 cup salsa verde, the beef, egg, tortilla chips and green onions in a large bowl.  Place the beef mixture into a 9x5-inch loaf pan. Top with the remaining salsa verde.
Bake for 1 hour or until the meatloaf is cooked through. Let the meatloaf stand for 10 minutes before slicing.
