Cake Ingredients:1 1/4 cups granulated sugar2 cups flour2 tsp ground cinnamon2 tsp baking soda2 large eggs1/2 cup vegetable oil1 tsp vanilla extract1 cup chopped walnuts5 cups peeled and diced apples Caramel Sauce Ingredients:1 cup packed light brown sugar1/2 cup half-and-half4 tbsp unsalted butterPinch sea salt1 tbsp vanilla extract
Preheat oven to 325 degrees Fahrenheit. In a large mixing bowl, mix together the sugar, flour, baking soda and cinnamon. Add in the eggs, vegetable oil and vanilla extract. Mix well. Stir in the walnuts and apples. Mix until the apples are integrated into the batter. Pour cake batter into a 10-cup baking pan. Bake for 45 to 50 minutes. Remove from the oven and cool on a wire rack. While the cake is baking, prepare the caramel sauce. Mix the brown sugar, half-and-half, butter and salt over low heat. Whisk constantly for five to seven minutes. The sauce will thicken as it cooks. Add the vanilla and cook while stirring for one more minute. Remove saucepan from heat. Allow the sauce to cool. Once the apple cake has cooled, drizzle the caramel sauce over it. This caramel apple cake recipe can be served warm or cold. For a decadent dessert, serve this cake alongside of vanilla ice cream or top with a dollop of whipped cream.
